Pancit Bihon's Recipe

Pancit Bihon is a classic Filipino noodle dish made with thin rice noodles, stir-fried with chicken, shrimp, and various vegetables. It's a staple at Filipino gatherings, symbolizing long life and prosperity.
Ingredients:
- 1/2 lb chicken breast, sliced into thin strips
- 1/4 lb shrimp, peeled and deveined
- 8 oz Pancit Bihon (rice sticks)
- 1 small cabbage, shredded
- 2 medium carrots, julienned
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 4 cups chicken broth
- Salt and pepper to taste
- Calamansi or lemon for serving
Directions:
- Soak the pancit bihon in water for about 10 minutes until softened, then drain.
- In a large pan or wok, sauté garlic and onion until fragrant.
- Add chicken and shrimp, cooking until browned and no longer pink.
- Stir in soy sauce and chicken broth. Bring to a boil.
- Add the carrots and cabbage, cook for 2-3 minutes.
- Add the drained bihon noodles. Toss gently until the liquid is absorbed and noodles are cooked.
- Season with salt and pepper. Serve hot with calamansi on the side. Enjoy!
