Sinigang na Baboy's Recipe
Description:
Sinigang na Baboy is a traditional Filipino sour soup known for its savory and tangy flavor, primarily derived from tamarind. It features tender pork pieces simmered with a variety of vegetables.
Ingredients:
- 2 pounds pork belly or spare ribs, cut into pieces
- 1 batch kangkong (water spinach)
- 2 medium tomatoes, quartered
- 1 large onion, quartered
- 1 large radish, sliced
- 2-3 pieces long green chili (siling haba)
- 1 packet sinigang mix (tamarind base)
- 6 cups water
- 2 tablespoons fish sauce (patis) to taste
Directions:
- In a large pot, combine pork, onion, and tomatoes. Add water and bring to a boil.
- Lower heat and simmer until the pork is tender, about 45 to 60 minutes.
- Add the radish and simmer for another 5 minutes.
- Stir in the sinigang mix and fish sauce. Add the long green chilies.
- Add the kangkong (stems first, then leaves). Cook for 2 minutes or until the vegetables are just tender.
